Eggplant, fresh, 3 cup, cubes
Spinach, frozen, 1 package (10 oz) yields
*fresh onion, 1 cup
*Tomato PLUM 1 Whole, 1 serving
Turmeric, ground, 1 tsp
*Ground Cayanne Pepper, 0.5 tsp
*Cumin Seed, Ground (1Tbsp), 1 tbsp
*ground corriander, 1 tbsp
Olive Oil, 1 1tsp
*Cumin seed, 1 tsp
*asafoetida (hing), 0.25 tsp
Ginger Root, 2 tsp
Garlic, 3 clove
*Salt, Sifto Table Salt, .25 tsp
Granulated Sugar, 1 tsp
Tips
It would be faster if everything is prepared before hand.
Shred Onions and Tomato, make ginger and garlic paste, dice eggplant, cook frozen spinach in microwave. You can also add fresh finely chopped spinach.
Directions
Heat oil in a pan add cumin seeds,when brown add
shreded onions, ginger and garlic paste. When Onions are little brown add diced eggplant - turmeric powder, Red chilly powder, cumin powder, coriander powder, salt add little bit of water and let it cook till tender. Take frozen spinach and cook it in microwave for 6 min. when eggplant gets are tender (cooked) add diced tomatoes and cooked spinach from microwave and let it simmer for about 5 to 7 mins. If needed and sugar or jaggary.
