Ingredients

• 1 can chickpeas
• 1 medium onion – chopped
• 2 carrots- chopped
• 2 sticks celery -chopped
• 1 can reduced salt chopped tomatoes
1/2 medium green bell pepper, chopped
• 2 Cloves of garlic crushed
• 1 or 2 red chillies – deseeded and chopped (optional)
• olive oil – 1 to 2 tbsp
• 4 cups of vegetable stock
• 1.5 teaspoon ground coriander
• 1.5 teaspoon cumin
Directions
Fry the onion, carrot, celery, bell pepper, and garlic in oil until just starting to softened. Next add the coriander, cumin and chillies (if using) cook for a further 2 minutes.
Add the tomatoes and stock and bring to a boil. Simmer gently for about 30min until the vegetables are cooked through.
Next add the chickpeas and stir well. Season with salt and pepper to taste. Cook gently for a further 10 minutes.
The soup is good with rustic wholemeal bread.
Makes about 5 servings, appx 1.5 cups each.
