Ingredients

    Fresh peppermint leave, approximately 20 (1 handful)
    1 tsp sugar
    1 cup malt vinegar

Tips

This helps cut the fat found in lamb, making it more easily digested.


Directions

Very finely chop the peppermint leaves. Sprinkle over some of the sugar to help draw out the oils and chop in even finer.
Place this in a small glass along with the remaining sugar. Pour over the vinegar and stir.

Stir again as you are spooning it onto your lamb to circulate the mint.
