Ingredients

    1.5 Chicken Breast Cubed
    3 tbsp Aioli mayo, homemade if possible
    One half bread machine pizza dough
    1 cup fresh white mushrooms
    1 large roma tomato
    1 cup marble cheddar shredded cheese

Tips

This recipe takes a long time, but you can easily shorten it by making the chicken breast and veggies beforehand. The pizza dough was made in a bread machine so it takes a certain amount of time, but store bought can be substituted.


Directions

Make pizza dough per bread machine instructions. When dough is done, split the dough in half, let part rise in warm area and put the other in a bag in the freezer.

Lightly flour the cubed chicken breast, you can put seasonings in the flour if you wish. In olive oil, cook each piece until sides turn light white color. Do not cook in olive oil all the way. Put chicken cubes on a baking sheet in oven at 170 for one hour. Repeat for all chicken cubes.

30 minutes after you put the chicken in the oven, cut the roma tomato and mushrooms and add to the same pan as the chicken. Let all cook for the last 30 minutes.

Roll the half of pizza dough flat, poke entire pizza with a fork to prevent rising. Let the crust cook until it can be picked up as one piece. Put the aioli mayo on the crust and add cheese to the top. Cook until cheese is melted then add chicken and veggies.

Cook until you have your crust preference, light brown is the normal, but you can cook it for less time or longer if that is your preference.
