Ingredients

3 Tbsp. Reduced Sodium soy sauce
4 Tbsp. sesame oil
1 Tbsp. Sriracha Hot Sauce
1 (8 oz.) container Fit & Active Honey Ham
1 Red bell pepper, seeded and diced
6 scallions, white parts minced, green parts cut into 1/2" slices
1/4 c. sliced purple onion
1 Tbsp. minced garlic
1 Tbsp. minced ginger root
4 c. cooked brown instant rice, cold
1 (20 oz.) can pineapple chunks, drained
Directions
Combine soy sauce, 2 Tbsp. sesame oil, and Sriracha in a bowl and set aside.
Heat 1 Tbsp. sesame oil in large non-stick skillet, over medium-high heat. Add ham, bell pepper, scallion whites, and onion and cook, stirring occasionally until lightly browned, 7-9 minutes.
Stir in garlic and ginger and cook until fragrant, about 30 seconds. Transfer to a plate.
Heat 1 Tbsp. sesame oil in now empty skillet over medium high heat. Add rice and cook, breaking up clumps with a spoon until heated through, about 3 minutes.
Stir ham mixture into rice until thoroughly combined.
Off heat, stir in pineapple and scallion greens.
