Introduction

This is my healthy version of Arroz con Pollo This is my healthy version of Arroz con Pollo
Number of Servings: 4

Ingredients

    1 tablespoon of olive oil
    4 cloves of garlic - minced
    1 medium onion - diced
    1/2 cup of tomato paste
    3/4 cup of quinoa
    2 medium tomatoes - diced
    4 skinless chicken thighs, bone removed
    1.5 cups of water
    1 tbsp cumin
    2 tbsp chili powder

Tips

You could add jalapeno or cilantro, but I didn't have any this time so I didn't. But it sure does taste good. I did not add salt or pepper.


Directions

Put the oil in a pan, let it heat up (medium heat), toss in the garlic and onions, let them saute, then put in the tomato paste and sorta melt it. Add the quinoa, let it brown a bit, add the diced tomatoes the cumin and chili powder. Add the water and stir, then add the chicken, leave on medium heat for a bit, covered though, then check on it and reduce the heat after 10 minutes and led it reduce down so the water is gone. That's about it.
