Introduction

Kind of like Butter Chicken, without all the meat, butter, or dairy! Vegan friendly, high fibre, quick and easy, one pan wonder! Kind of like Butter Chicken, without all the meat, butter, or dairy! Vegan friendly, high fibre, quick and easy, one pan wonder!
Number of Servings: 8

Ingredients

    Can of chick peas - drained and rinsed
    2.5 medium yellow onions, chopped
    4 cloves garlic
    4 tbsp Olive Oil
    ground ginger
    curry powder
    turmeric
    1 large can of diced tomatoes
    1 can of full fat coconut milk (I opt for full fat since it's a healthy fat, and adds a lot more richness while avoiding butter!)

Directions

Chop onions into thumbnail size pieces, crush garlic and sautee both in the olive oil until softened. Add chick peas and spices and stir well. Add all remaining ingredients and simmer till heated through.

Serve over hot rice or couscous, or simply eat plain like a soup! Delicious next day too!
