    4 c chopped rhubarb
    3 c quartered strawberries
    1 c sugar
    1/4 c cornstarch
    1/4 c (or less) fresh lemon juice

    1 2-crust pie dough

Cover the edges with foil to prevent burning and DO put foil underneath to catch drips!


Chop rhubarb and strawberries and put aside.

Prepare dough and put bottom layer in pie plate.
Add sugar, lemon juice and cornstarch to fruit and stir to coat.
Fill pie crust, place top dough, flute and cut slits.
Bake 425 15 minutes then 375 50-60 minutes till brown.

Serving Size: Makes 1 large, deep 2-crust pie; calculated for 10 slices.

  • used half stevia 9 packets and a littlw more sugar. used frozen and thawed strawberries and rhubarb from garden. Put a little flour on the bottom of pie shell. - 4/2/18
