Introduction
Healthier than the usual breakfast bars we eat when we are in a hurry. Make these ahead and have 12 tasty breakfasts that are good to go!This would also work with your favorite jam or even frozen blueberries. Ingredients

Make a rhubarb filling by dicing it and putting it in a pot with 2 TBSP of stevia. Let it melt through and stir frequently until you have the consistency of a spreadable jam. Set aside.
1.5 cups of whole wheat flour
1.5 cups of oats
3/4 cup of brown sugar
1 tsp of salt
3/4 cup of apple sauce
5 TBSP of melted butter
rhubarb filling (instructions above - this was included in the nutritional information)

Directions
Mix the dry ingredients together.
Remove 1/3 of the mixture and place it in a smaller bowl.
Add the applesauce to original bowl, mix, then add 2 TBSP of the melted butter. Mix until combined well. You want it wet, but not too much. (It is ok to add some extra oats if the mixture is too wet)
Press the mixture into a lightly greased 9x13 glass baking dish.
Pour the rhubarb filling over the mixture, spread it evenly.
Mix the remaining butter with the oats you had set aside. It will be crumbly. Sprinkle this over the rhubarb filling.
Bake in a preheated 375F oven for about 35 to 40 minutes, until top is lightly browned. (If you have the convection feature, do that for the last 5 minutes of baking to add some crunch)
Slice into bar-sized pieces. Serve warm or room temperature.
