Ingredients

    2 - 10 oz packages of frozen spinach- thawed and drained to remove as much liquid as possible.
    2- Whole eggs
    3- Egg whites or egg substitute equivalent
    1/2 C Cottage cheese (1%)
    3 oz shredded lowfat cheese

Tips

The original recipe calls for 1 lbs of frozen spinach but 2 10 oz packages only gives you an extra 4 oz. It's a work in progress.
I haven't tried this with mushrooms but I think some sliced or chopped baby 'bellas might be good.


Directions

preheat oven
Bake for 1 hour at 350 deg F
