Introduction

Ingredients

    2 tbs room temp butter
    1/4 cup sugar

    1 large egg
    1/4 cup applesauce
    1 cup mashed bananas

    1/2 whole wheat flour
    3/4 cup all purpose flour
    1/4 tsp salt
    1/2 tsp baking soda

Directions

In a large mixing bowl, combine softened butter and sugar, and beat with a mixer at medium speed, about 3 minutes or until well combined. Add the egg and applesauce, and beat another 2 minutes. Fold in the bananas. Combine the two flours, baking soda, and salt in a separate large bowl. Add the flour mixture to the banana mixture, 1/2 cup at a time. Spray pan with nonstick spray or butter and pour in batter. Bake for 50 mins to an hour in a 350F oven. Take out and let cool. Cut and serve however your soul (or someone else's) desires.
