Ingredients

    1/4 cup almond flour
    1 T cocoa powder
    1/4 tsp. baking powder
    pinch salt
    3 T Swerve
    2 T coconut oil, melted
    1 T water
    1 egg
    1/8 tsp. vanilla extract

Tips

You may need to adjust the time for your microwave - from approximately 60 to 80 seconds. The cake should be set, but moist when done. Serve with no-sugar-added whipped cream.


Directions

Mix dry ingredients in a two-cup glass measuring cup. In a small bowl, mix the egg, oil, water, and vanilla extract, and stir well. Add the egg mixture to the dry ingredients and mix well. Scrape any batter from the sides of the cup. Cover with plastic wrap and slit to vent. Microwave on high for 75 seconds. Cool slightly, cut in half, and place each half on a serving plate. Spoon pudding on top and serve.
