Yummy makes 6 1/2 cup servings Served over lettuce with a little sour cream and salsa very good. Ingredients

1/2 cup raw quinoa
1 t better than bouillon chicken base
1 cup rinsed black beans
5 mini red/yellow/orange peppers
1/4 cup cilantro
2 T red wine vinegar
1 lime juiced
2 t garlic minced
1/4 t cumin
Cook rinsed quinoa in 1 cup water with bouillon bringing to a boil then simmering for 15 min(on about 5 on my electric stove) Add everything together chill and serve.
