Ingredients

    6 new red potatoes, quartered with skins on
    2 cups water
    1 tsp salt.
    Wash potatoes thoroughly. Place in a medium size pot and bring to a boil. Boil approximately 20 minutes or until potatoes are tender. Drain. Add

    1 TBS butter or margarine
    1/2 tsp oregano (or spice of your choice)
    1/2 tsp black pepper
    1 tsp chopped parsley

    stir until butter is melted and potatoes are covered with butter and spices. Serve.

    Serves 3.

Directions

Boil potatoes until tender.
Drain.
Remove from heat.
Stir in butter and spices.
Serve
