Number of Servings: 18

Ingredients

    6 cups old fashioned oats
    1 cup coconut flakes
    1/2 cup coconut oil
    1/2 cup olive oil
    1/2 cup chopped dried pineapple
    3/4 cup ground chia seed
    3/4 cup ground quinoa
    3 tsp. grated lemon rind
    1 cup chopped almonds
    3/4 cup water

Tips

Add chocolate chips, sesame seeds, and substitute walnuts or your favorite nut. For added protein, add 6-9 scoops of your favorite protein powder. If you vary oils or agave, you may have trouble with bars holding together.


Directions

Mix dry ingredients in large bowl. Heat liquids, including coconut oil, on low until coconut oil melts. Pour liquids over dry ingredients. Stir until thoroughly blended. Pour all into 13x9 pan lined with wax paper. Lay another sheet of wax paper over all, and press very firmly. Cool until firm. Cut into bars. Seal individual bars in snack size zip baggies, and place in gallon size freezer bag. Store in the freezer.
