Ingredients

    zucchini, tomatoes, onion, olive oil, earth balance buttery spread

Directions

Cook onion in olive oil about 7 min, add tomatoes and zucchini. Add salt, pepper and Earth Balance. Allow to simmer for 30 - 40 min. Place all ingredients in blender and puree.
