Ingredients

    Bush's Pinto Beans, 6 cup
    Mission Yellow Corn Tortilla, 12 serving
    *Kraft Mozzarella Finely shredded Part Skim cheese, 3 cup
    *El Pato Green Enchilada Sauce (1/4 cup serving), 10 serving (about 2 1/2 cups)

Tips

Authentic New Mexican is stacks of three tortillas. Divide each in half. I stack 6 in order to keep it all in one casserole dish. This freezes acceptably.


Directions

Preheat oven to 350. Spray 13 X 9 inch casserole with cooking spray.
Place a small amount of enchilada sauce in the bottom of the dish.
Place two tortillas side by side on the sauce. Top each with 1/2 cup of beans. Add 1/4 cup cheese, and top with enough enchilada sauce to cover.
Repeat layers until you have two stacks of 6 tortillas.
Bake for 30 minutes.

Serving Size: Cut each stack into quarters, each quarter is a serving
