Ingredients

    2 large eggs
    1 Tbs Lactose Free Whole Milk
    1 Tbs diced red onion
    1 Tbs Seasoned Black Beans (drained and rinsed)
    1 Tbs Petite diced tomatoes, w/sweet onion
    1/4 c Mexican 4 cheese blend shredded cheese

Tips

may add salt and pepper to taste if needed


Directions

Mix milk with eggs and set aside. Spray pan with cooking spray and add all other ingredients (excluding egg mixture). Saute on low/medium heat for a few minutes then add egg mixture. Cook, lifting edges occasionally to allow uncooked egg on top to drain to bottom and cook. When there is no more runny egg on top, gently flip over. Cook until done, top with cheese and fold in half.
