Introduction
A little lighter way to do a tuna melt for those of us with allergies or who don't feel the need for the cheese. The avocado is used as a base in place of mayo in this recipe. Ingredients

2 Engish muffins, halved
1 Tbsp olive oil or margarine
1/4 tsp (or less) fresh chopped parsley
1/4 tsp (or less) fresh chopped basil
1-3 small mint leaves finely chopped
1 dash cilantro
1 dash pepper
1 dash salt
1-2 Tbsp lemon juice
1/4 cup cucumber, peeled & chopped
1/4 cup celery, chopped
6 oz light tuna in water(drain excess liquid)
1/4 avocado (creamed or smashed)
4 slices fresh tomato
Tips
You can add non-dairy cheese on top of the tomato slice if desired.
Directions
Preheat you oven to broil. Place 2 english muffins (sliced in half) on a baking sheet with nonstick parchment paper. Lightly brush olive oil or butter on the top of each slice and place the baking sheet into the broiler for 3 to 5 minutes.
Chop up celery and cucumber and add it to a small bowl. Finely chop up a few sprigs of parsley, basil leaves, mint leaves and cilantro and add it to the bowl. Add in the tuna, lemon juice and avocado and mix together well. Salt and pepper to taste. Divide the mixture and place on the top of each toasted english muffin half and top with a slice of fresh tomato.
Place melts in the oven to broil for 3 to 5 minutes until evenly toasted.
Once toasted, serve immediately. Goes well with a nice side salad.
