Ingredients

    10 romaine lettuce leaves, chopped
    2 roma tomatoes, chopped
    1 bell pepper, chopped
    1 cucumber, peeled and chopped
    2 cloves garlic, minced
    1 apple, peeled and chopped
    1 red onion, chopped
    1 can chickpeas, drained and rinsed
    1 can sliced olives, drained and rinsed
    2 tablespoons sliced almonds
    2 tablespoons extra virgin olive oil
    2 tablespoons balsamic vinegar
    Juice of 1 fresh lemon
    2 teaspoons Italian seasoning
    Dash of pepper
    Dash of salt

Tips

Try a pear instead of an apple,
Try black beans instead of chickpeas,
Try different color bell peppers


Directions

Combine all ingredients through almonds in large bowl.

In measuring cup, combine olive oil, vinegar, lemon juice and spices, stir.

Pour dressing over salad and toss.

Serving Size: makes 3 hearty servings
