Number of Servings: 10

Ingredients

    This may be scaled down, but I made a large amount for lunches at work.

    3 bunches of curly kale- washed, stemmed, and blanched
    3-4 medium carrots- peeled and grated
    1 cup raw, unsalted cashew nuts
    3 cups shelled, steamed edamame
    1 cup unsalted sunflower seeds
    1 pint grape or cherry tomatoes
    2 cups fresh blueberries
    1.5 cup ground flaxseed
    1-2 cups dried cranberries
    1/2 cup red onion, chopped

    Dressing to taste- I recommend Annies Natural vegan Goddess dressing, lite.

    Be warned: my measurements above are approximate as I usually just eyeball it, so feel free to improvise!

Tips

Do not overcook the kale! I blanch for a very short time to maintain the integrity of the leaves and keep the vibrant color.


Directions

Remove stems from kale and blanch- boiling for 2-3 minutes followed by 3 minutes in an ice bath. Drain kale then combine all ingredients and enjoy!

Dressing is optional, but I usually toss with a little Annies Natural vegan Goddess dressing, lite.
