Ingredients

12 oz package of udon noodles
4 scallions (finely sliced)
3 medium stalks celery (diced)
1 large red bell pepper (diced)
1/2 c. diced carrots
1/2 c. chopped snow peas
DRESSING:
3 tbsp chili sauce (Thai or similar)
3 cloves garlic, minced
2 tbsp sesame oil
2 tbsp mirin
2 tbsp rice wine vinegar
2 tbsp soy sauce
1" piece ginger root, grated
Tips
Top with protein of choice for even more protein (pictured with Chili-Lime Pan Fried Tofu, also on Spark Recipes)
Directions
1. Cook udon noodles according to package directions (follow the cooling directions particularly)
2. Slice, dice, mince, and chop vegetables as directed, and combine with cooled udon noodles in a large bowl.
3. In a smaller bowel, whisk together all ingredients for the dressing, and pour over the noodle/vegetable mixture.
4. Turn and combine with tongs until thoroughly coated.
Serve & enjoy!
