Number of Servings: 12

Ingredients

    3 overripe bananas, mashed
    1/3 c. honey
    1/3. applesauce
    1 c. fresh or frozen blueberries
    1-1/2 c. whole wheat flour
    1 tsp. baking powder
    1 tsp. baking soda
    1/4 tsp. salt
    1 tsp. vanilla extract
    1/2 Tbsp. cinnamon

Tips

Can use any other fresh or frozen fruit in place of blueberries.

Directions

Preheat oven to 350. Mix together mashed bananas, honey, applesauce, and vanilla set aside. In a separate bowl, mix flour, baking powder, baking soda, cinnamon and salt. Once dry ingredients are combined, add to banana/honey/applesauce. Fold in blueberries. Divvy up batter into 12 muffin tins (can use with or without muffin liners) and bake 20-25 minutes, until toothpick comes out clean. Let cool 10 minutes, enjoy!

Serving Size: Makes 12 muffins

    Very Good
    The recipe has no temp to cook the muffins at so I went to the site it was adapted from and it is 350 degrees :) Also instructions don't say to add the cinnamon so I forgot and had to add to the final mix, won't do that again. Made these today and love them ! - 2/11/17
