Introduction

A new take on an old favorite that's not only healthy but will also brighten any bad day. A new take on an old favorite that's not only healthy but will also brighten any bad day.
Number of Servings: 1

Ingredients

    2 slices of whole grain bread
    1 whole fresh peach (or frozen slices if not in season)
    1 egg scrambled up in a bowl raw
    1 tsp of cayenne pepper (I prefer smoked)
    1 splenda packet (for sweetness)
    2 oz of Fage plain yogurt (or just a few tbs)
    A splash or two tbs of plain light soy milk

Tips

*careful with the cayenne! Heavy hands means you might have an intolerable spice level.


Directions

*Grab up your egg, cayenne, soy milk, and splenda.
*blend that all together in a bowl
*Grab your bread slices and dunk into egg mix
*coat both sides evenly
*put into pan and cook until both sides of bread are browned
*cut your peach into manageable slices
*place in pan
*cook them until slightly browned
*put peach slices on toast
*add your yogurt on top
*enjoy!

Serving Size: Makes two slices of bread and one topping of fruit
