Ingredients

    One medium ripe avocado
    6 large hard boiled eggs
    1/4 - 1/2 of a red onion
    2 cloves of garlic
    1 and 1/2 juice of a lime
    1 tbsp of olive oil
    1 or 2 tbsp of cilantro (optional)
    salt
    pepper
    red pepper

Tips

I am always looking for ways to reduce or eliminate Mayonnaise from recipes and I thought this was a perfect first step in the right direction.


Directions

While boiling your eggs, finely dice red onion and garlic and combine in a bowl with lime juice. Add a pinch a salt to the mixture and let stand for at least 10 minutes. Combined mixture with mashed avocado, mix well. Add diced hard boiled eggs, olive oil, season with pepper(s).. and you are done.

Serving Size: makes about 6 - 1/2 cup servings
