Introduction
This is a twist on traditional hummus, with avocado and olive oil instead of tahini. This is a twist on traditional hummus, with avocado and olive oil instead of tahini.Number of Servings: 6
Ingredients

1 1/2 cups frozen shelled edamame
1 medium avocado, chunked
2 tsp soy sauce
2 tbsp olive oil
1 tsp prepared wasabi (fresh or from a tube)
Juice of one large lime
Directions
Cook edamame according to package instructions. Drain and rinse with cold water. In food processor, combine cooled edamame, avocado, lime juice, and 1/2 the olive oil. Pulse until ground. Then add soy sauce, wasabi, and the rest of the olive oil and blend until smooth (it takes awhile to achieve the smooth consistency of traditional hummus.)
Add more soy sauce or wasabi according to taste, if you'd like, and refrigerate.
Makes 6 1/4 cup servings. Great with sesame crackers or sliced veggies, or use on a wrap in place of guacamole!
