Ingredients

    1lb Italian sausage, casing removed
    2 large Zucchini, chopped
    1 large sweet onion, chopped
    1 large tomatoe, diced or chopped
    2 tsp diced garlic
    1 can Fire Roasted (or plain) diced tomatoes

Directions

Cook sausage over medium heat, breaking up, until browned. Remove sausage to a plate, reserve fat in pan. Sweat onions over low heat 3-5 minutes in reserved fat until softened. Add zucchini and cook for 3 minutes. Add garlic and all tomatoes. Stir in sausage and heat through until zucchini is fork tender.
