Introduction

These are baked rather then fried and make a great side dish. These are baked rather then fried and make a great side dish.
Number of Servings: 2

Ingredients

    2 tablespoons olive oil
    1 tablespoon lemon juice
    2 cloves garlic, crushed or minced
    2/3 cup shredded Parmesan Cheese
    4 zucchinis, cut into halves, then quartered

Directions

Cut ends off zucchini, then cut in half. Quarter each half to make the "fries.
Line a cookie sheet with tin foil and arrange zucchini fries.
In a small bowl, combine all other ingredients except for the cheese.
Brush the mix onto the zucchini.
Sprinkle the cheese on last.
Bake for about 11 or 13 minutes at 350 degrees. If desired, broil for an additional 2 or 3 minutes to make the cheese golden brown.
