    *Whole Wheat Flour, 2 cups
    Baking Powder, 2 tsp
    *SugarLeaf, 24 tsp
    Egg white, fresh, 3 large
    Milk, 1%, .5 cup
    Lemon Juice 'Real Lemon' 100% juice, 4 tsp (recipe called for buttermilk - made mine with milk and lemon juice)
    *Lemon Juice from 1 lemon
    *Lemon zest ~ fresh lemon peel from 1 lemon
    Greek Yogurt-Fat Free, Plain, .25 cup
    Olive Oil, 4 1tsp
    1 cup grated Zucchini
    For Glaze
    Powdered Sugar, 1 cup, unsifted
    Lemon Juice 'Real Lemon' 100% juice, 2 TB
    Milk, 1%, 1 TB


Mix flour and baking powder in a medium bowl and set aside. In a large bowl, beat egg whites, then add oil, yogurt, lemon juice, milk, lemon zest and blend together. Fold in zucchini until mixed well. Add dry mixture to the wet and blend until well combined. Pour batter into greased 9x5 pan. (I used 2 smaller pans) Bake at 350 for 30 to 35 min. Glaze while still warm.

Serving Size: makes about 24 slices
