Ingredients

    1 ts olive oil
    1/2 cup chopped onion
    1/2 ts red curry paste (more to taste)
    1/4 ts turmeric
    1/4 ts chipotle powder
    1/4 cup coconut milk
    1-3/4 cup cooked mashed pumpkin
    2 cups chicken or vegetable broth
    1 TB honey
    1 TB maple syrup
    1 TB lime juice
    Salt and pepper to taste

Tips

Use vegetarian broth for vegetarian version. Increase maple syrup to 2 TB and omit honey for vegan version.


Directions

Heat oil in soup pot. Saute onion until tender. Stir in red curry paste and spices, and saute 30 seconds. Add coconut milk and bring to a hard boil. Add remaining ingredients. Puree with hand-held blender. Bring to a gentle boil and simmer 5 minutes. Adjust seasoning.

Serving Size: 4 1-cup servings
