Introduction

Number of Servings: 4

Ingredients

    12 oz Cherry, or grape, or yellow or any small sized tomatos. I actually use a combination of all Halved

    2 Cucumbers chopped in bite size chunks

    1/4 cup (to taste) red onion diced

    1 container (7 oz) 2 % Fage Greek Yogurt

    2 tbsp. fresh chopped mint (to taste)

    2 tbsp. fresh chopped dill ( to taste)

    Sea Salt and fresh ground pepper to taste

Tips

Is best if it sits for a little so the mint and dill permeate the yogurt. If the tomatoes juice up and dilute the yogurt, I will drain off the excess juice to keep the yogurt really thick.


Directions

Halve Tomatos, Rough chop Cucumber, Dice Onion, chop mint and dill. Toss together. Fold in one container of Fage greek yogurt. S and P to taste

Serving Size: 4-6 depending on whether or not this would be a side or main dish
