    Ground beef, light sour cream, corn tortillas, canned green chiles, fat free cream of chicken soup & cheese.

Tips

The traditional, not so light, way of making enchiladas is to fry the tortilla, dip it in the sauce & then fill & roll.


Directions

cook diced onion with ground beef til brown while adding chili powder, cumin & diced tomato. Make sauce separate in bowl with sour cream, cream of chicken soup, green chile's, garlic & cumin. add pureed chard to sauce. Microwave 6 tortillas at a time for 45 seconds, spread a little sauce inside a tortilla, line with meat & a little cheese then roll into a casserole dish. repeat til you finish the meat, try to leave some cheese to top your casserole. Top enchiladas with remaining sauce & cheese. Bake for about 10-15 mins at 350 or till cheese is melted
