Ingredients

    2 large eggs
    2 oz. ground chorizo
    ¼ cup chopped white onion
    ¼ cup chopped bell pepper (any variety; red, yellow, or orange)

    ½ tsp. jalapeno pepper, seeded and finely chopped (use 1 tsp. for more spice/heat)

    Salt and Pepper to taste
    Cooking Spray

Tips

Optional: You can serve with a hot pepper sauce or fresh pica de gallo on the side, or top with shredded cheese. Be aware that this may change the nutritional information.


Directions


In a bowl whisk eggs until blended and set aside. Mist a skillet with cooking spray and set over med-high heat. Add chorizo, onion, bell pepper, and jalapeno pepper. Cook , stirring slowly, for 5 minutes, or until chorizo is browned through.
Slowly add your eggs and continue to stir with a rubber spatula or wooden spoon until eggs are scrambled. Remove from heat, season with salt and pepper, and serve.


Serving Size: Makes two servings. (about 1 cup each)
