Introduction

Ingredients

    0.75 cup Parmesan Cheese, grated
    3 clove Garlic
    1 6oz bag spinach
    1 jar Trader Joe's Fire Roasted Red Peppers, or about 3 roasted peppers
    16 oz Apple Smoked Mozzarella Cheese
    12 oz Ronzoni Garden Delight Penne Pasta
    1 tbsp (C) Vinegar, Red Wine (Gr Value)
    1 cup Hellmans Low Fat Mayonnaise
    salt
    pepper
    cayenne (to taste--start with just a bit and add more as you mix and taste)

Directions

Mix mayo, vinegar, parmesan cheese, garlic, salt, pepper & cayenne until well mixed. Cook 12 oz penne pasta according to directions, keeping pasta on the firm side. Mix cooked pasta with spinach, diced roasted peppers, and dressing mixture. Add smoked mozzarella in cubes. Serve warm or chilled.

Alternatively, spinach can be wilted in a pan separately with cooking spray or a bit of butter and a clove of garlic before adding to cooked pasta.

Makes about 16 1-cup servings
