Ingredients

    Chicken Leg & Thigh- Roasted W/Skin, 3 serving
    Mozzarella Cheese, whole milk, 1 cup, shredded
    Parmesan Cheese, grated, 0.5 cup
    Sun Dried Tomatoes, 1 cup
    *Extra Virgin Olive Oil, 5 tbsp
    Spinach Pasta, cooked, 16 oz
    Mushrooms, canned, 0.5 cup )
    Salt, 2 tsp
    *Pepper, white, 1 tsp
    Garlic, 1 clove
    Chicken stock, home-prepared, 0.5 cup
    *Pine Nuts, 2 tbsp
    Onions, raw, 1 cup, chopped

Tips

Retain some of the pasta water to help moisten the dish. Try adding other ingredients such as artichokes or black olives.


Directions

Saute' Onions in olive oil with salt and pepper while boiling pasta according to package directions. Add mushrooms, garlic, tomatoes, chicken and stock. Cook until tender. Remove from heat and toss in pasta, using some of the reserved pasta water if needed. Add cheeses and pine nuts just before serving.
