Ingredients

1 egg
1/4 tsp salt
1 tbsp. brown spicy mustard
6 oz. EXTRA LIGHT TASTING olive oil (A MUST!)
2 oz. avocado oil
1 tbsp. apple cider vinegar
Tips
You need to use Extra Light Tasting olive oil. The regular extra virgin oil is too strong for mayonnaise. You can't substitute.
Directions
Have to use hand blender! Add egg to a tall, narrow container (just big enough to get hand blender in and out). The egg can come right out of the frig. It does not have to be room temperature. Add salt, oils, and mustard. Pour oils into the container. Let egg settle to bottom. Use the hand blender to mix. Volia- you have delicious, healthy, non-processed mayonnaise. Enjoy!
