Ingredients

1 lb ground turkey breast
1 oz taco seasoning
14.5 oz diced tomatoes
12 oz birds eye southwest vegetable blend
15 oz pace salsa con queso
16 oz enchilada sauce
5 burritto sized tortilas
12 oz mexican shredded cheese
6 oz publix guacamole
Directions
preheat oven 400
saute meat 5-7 minutes drain fat
stir in tomatoes and taco seasoning
add vegetables and stir in 1/2 cup of salsa
spread 1/2 cup enchilada over bottom of baking dish
top with 1 tortilla 1/4 cup of cheese
add 1-1/2 cup of meat mixture spread out
add tortilla on top.
repeat layers
top with remaining tortilla 3/4 cup of enchilada sauce 1/2 cup of tomatoes and 1 cup of cheese
cover dish with foil bake for 30 minutes
remove foil bake 10 minutes
let stand for 10 minutes
spread guacamole on top
