Ingredients

1½ almond milk
½ cup pumpkin puree
2 large eggs
2 cups whole grain oat flour
1 ½ tsp baking powder
½ tsp pumpkin pie spice
Tips
The recipe calls for 0 added sugar. This is because I intend to add pure maple syrup or honey as the sweetener after they are cooked. For sweeter cakes add 2 tablespoons of sugar or honey to the mixture before baking.
Directions
Preheat electric griddle to 400° F. Mix wet ingredients together. Mix dry ingredients together. Combine and stir until no clumps are visible. Pour on batter and cook until bubbles form on the surface then flip. Cook an additional 3-4 minutes or until there is no wet dough in the middle.
Serving Size: Makes approximately ten 4 inch pancakes.
