Introduction
This is a recipe my mom used to make in mini-tart form for appetizers with a cream cheese pastry crust. I wanted something lower carb for a breakfast or with a salad for lunch or dinner. Ingredients

8 slices of low sodium bacon diced- cooked- drained
1.5 C Leek sliced and diced up
1 C onion - diced
1 T olive oil
2t grainy mustard
1 t oregano - dried - leaves (recipe says ground because that was the only choice.
3 eggs beaten or equivalent liquid egg sub - recipe was calculated with 3 large eggs
3/4 C Fat Free Half and Half
8 ounces shredded low fat swiss cheese
Tips
You may make this with more eggs or egg substitute if you like a thicker quiche/tart. I always mix with a hand immersion mixer to incorporate a little more air.
Directions
Cook bacon- drain and set aside.
Saute leek and onion in olive oil til tender and allow to cool.
Combine remaining ingredients and whisk together. Add leek and onion to mixture and pour into a greased quiche pan or pie plate.
Distribute bacon on top.
Bake at 350 degrees for 30 minutes or until set
