Number of Servings: 12


    1/2 c. flaxseed meal
    1 egg
    1/4 c vegetable oil
    1 1/2 c sugar
    1 c pumpkin puree
    1/2 c unsweetened applesauce
    1 1/2 c whole wheat flour
    1/2 c wheat bran
    1 tsp baking soda
    1/2 tsp baking powder
    1/2 tsp salt
    1 tsp cinnamon
    1/2 tsp nutmeg
    1/4 tsp cloves


Mix sugar, pumpkin, applesauce, egg and oil. Mix dry ingredients together and stir into pumpkin mixture just till combined. Pour into 12 muffin cups and bake for about 20 minutes.

Makes 12 muffins

    btw, I used a 350 degree oven and a timer of 15 minutes for mini-muffins - 2/1/11
