Number of Servings: 12

Ingredients

    1/2 c. flaxseed meal
    1 egg
    1/4 c vegetable oil
    1 1/2 c sugar
    1 c pumpkin puree
    1/2 c unsweetened applesauce
    1 1/2 c whole wheat flour
    1/2 c wheat bran
    1 tsp baking soda
    1/2 tsp baking powder
    1/2 tsp salt
    1 tsp cinnamon
    1/2 tsp nutmeg
    1/4 tsp cloves

Directions

Mix sugar, pumpkin, applesauce, egg and oil. Mix dry ingredients together and stir into pumpkin mixture just till combined. Pour into 12 muffin cups and bake for about 20 minutes.

    Yummy muffins....hard to follow recipe....for example, what temperature oven is needed? List ingredients in order you use them.
    btw, I used a 350 degree oven and a timer of 15 minutes for mini-muffins

    very good, sweet and hearty recipe! I baked them for 25 mins at 350 degrees and they are great! - 9/21/08
