Ingredients

2 Center Loin Pork Shops (8-10 oz if bone in.; 6 oz boneless.)
1 cup long grain white rice
1 to 2 tbsp of Canola or other high heat cooking oil.
1 cup orange juice
1 cup low fat chicken broth
1/2 to 1 tsp fresh thyme
salt

Directions
Wash chops and dry. trim excess fat. Sprinkle with salt and pepper to taste.
In hot pan add 1 Tbsp Canola or other high heat oil. Sear chops on both sides (approximately 2 minutes on each side.
In the meantime, oil 8x8" square pan. (I line pan with heavy duty foil and oil that. Pour rice into pan and move gently until rice covers entire bottom. Add fresh thyme leaves to rice.
Place browned chops on top of rice. Pour over orange juice and chicken broth. Seal pan tightly with aluminum foil to keep steam in. Place pan in 350 degree oven for approxmately 30 - 35 minutes until rice soaks moisture. Uncover pan and return to oven for no more than 10 minutes to let any excess moisture evaporate. Serves 2 with left over rice.
