Introduction

Ingredients

    Half gallon fat free half and half
    half gallon chicken broth
    2-3 medium carrots diced finely
    1 medium onion diced
    1 lb broccoli cut into small pieces (no stems)
    1 cup shredded sharp cheddar cheese (use 2% if you like)
    2 tbsp butter
    1/4 cup flour
    1 tsp salt
    1/2 tsp black pepper
    1/4 tsp nutmeg

Directions

Finely dice carrots, cut up broccolli in small chunks (leave out stems). Dice 1 medium onion, saute and set aside. Put 2 tbls butter in bottom of pan and slowly add 1/4 cup flour and whisk until well blended. Slowly pour in 1/2 and 1/2, then add chicken broth. Stir constantly for about 20 minutes on simmer. Add all veggies and let simmer for at least 20 minutes until thickened. Slowly add cheese until melted. Spinkle nutmeg on top and stir in. This recipe freezes well. I freeze in two portion containers for future use.
