Ingredients

    Dry Ingredients:

    1 Cup Whole Wheat Flour
    1/2 Cup Minute Oats/Steel Cut Oats
    1 Tbsp Chia Seeds
    1/2 Tsp Baking Powder
    1/4 Tsp Baking Soda
    1 Tsp Cinnamon
    1 Tsp Pumpkin Spice
    Pinch of Salt
    Sunflower and/or Pumpkin Seeds (optional)

    Wet Ingredients:
    2 Egg Whites
    1 Cup Pumpkin Puree
    1 Cup Unsweetened Applesauce
    1/4 Cup Organic Agave Nectar (or honey/maple syrup)
    2 Tsp Vanilla



Tips

I found mine to be pretty dense, so maybe add 1 more egg white or more baking powder.

Directions

Preheat oven to 350 F. Combine dry ingredients in one bowl and wet ingredients in another bowl. Once mixed, add wet ingredients to dry and stir until no flour is visible. Pour into your choice of muffin tin (regular or mini). Add sunflower and/or pumpkin seeds on top for garnish. Bake for 20 mins or until toothpick comes out dry in the middle of muffin.
