    Sweet mini peppers (3), 2 serving (remove)
    *sweet yellow onion, raw (1 medium onion), 1 serving (remove)
    *Extra Virgin Olive Oil, 2 tbsp (remove)
    Tomato, grape (3oz = appro 12 tomatoes), 3 oz (remove)
    Shady Brook Farms Turkey Breast Cutlet, 8 oz (remove)


This makes 3 one and half ( or so) cup servings and I serve with various rices.


Chop or slice all vegetables. Cut turkey cutlets into bit size strips. Heat skillet over med. heat and add 2Tbsp. olive oil. Add all vegetables and toss to coat. Sprinkle with salt and pepper. Cook until vegetables are tender, tosiing occasionally, then remove from pan. Add sliced turkey cutlets, sprinkle with cumin and a dash of salt. Cook till done about six minutes, tossing occasionally to ensure even cooking. Return vegetables to pan and cook 1 more minute.
