Ingredients

3 1/2 cups Sliced Fresh Strawberries
3 1/8 cups whole wheat flour
2 cups sugar
1 cup applesauce
1 tsp salt
1 tsp baking soda
1 tbsp ground cinnimon
1/4 cup vegetable oil
4 eggs, lightly beaten
1 tsp vanilla extract
3/4 cup chopped pecans
Directions
Preheat oven to 350. Prepare 2 loaf pans with flour baking spray.
Slice strawberries in a bowl and sprinkle lightly with sugar. Mash strawberries lightly with potato masher and set aside.
Add all dry ingredients to a large mixing bowl (flour, sugar, salt, baking soda, and cinnimon). Add the oil, applesauce, eggs, and vanilla to strawberries. Mix well. Add wet ingredients to dry ingredients and stir until just moistened. Paur 1/2 the mixture into 1 prepared pan. Fold in pecans to remaining batter and then pour into 2nd prepared pan. Bake for 45 minutes and test with knife. If knife does not come out clean bake until it does!
