Ingredients

    *All Natural Stone Ground Yellow Corn Meal, 1 cup
    Salt, 1 tsp
    Granulated Sugar, 1 tsp
    *Canola Oil, 1 tbsp
    Yogurt, plain, low fat, 1 cup (8 fl oz)
    Water, tap, 2 cup (8 fl oz)
    *Hot green chilies (1 chili), 1 serving
    *Green Giant Garden Vegetable Medley (Frozen)
    Brown mustard seeds 1 tsp
    chopped onion .5 cup

Tips

This is my take on polenta which is made like Indian Upma.


Directions

Heat oil in a sauce pan and add mustard seeds and green chili. When seeds pop add onions and saute till soft.
Add frozen vegetables and salt and cover and steam till vegetables are soft. Add water and yogurt and bring it to a boil. Add corn meal stirring slowly to make it smooth. When it comes to bubble cover and simmer for 10 minutes.

Serving Size: makes about 5- 1cup servings
