    1 qt beef stock unsalted
    3 carrots chopped
    3 stalks celery chopped
    1 medium onion chopped
    2 lbs lean beef stew meat cut into bite sized cubes

Put everything into crock pot and cook on high for 4-6 hours. Put frozen mixed vegies in for last 2 hours only.
