Cooking for one? This is enough for 4 meals! Make tacos one day, taco salad another, serve over brown rice, or even freeze individually for another day! Cooking for one? This is enough for 4 meals! Ingredients

    1 pound 96% lean ground beef
    1/4 cup chopped onion
    1/4 cup chopped celery
    1/2 cup salsa
    1-1/12 tbsp. chili powder
    1 tsp. minced garlic

Directions

~Saute beef, onions, celery and garlic in stickfree frypan until meat is brown and veggies transparent. The beef is so lean you may wish to keep it covered to avoid evaporation. Stir frequently. (about 15 minutes)
~Stir in chili powder and salsa.
~Simmer together 5 minutes or more.

Divide into 4 servings. Use one and save 3 for another day.

Day 1 - Serve with corn tortillas for tacos.
Day 2 - Add to salad makings for taco salad.
Day 3 - Serve over 1/3 cup brown rice.
Day 4 - Add cooked/canned tomatoes & pinto beans for chili.

Top with shredded fatfree or 2% cheddar cheese... not included in recipe
