Ingredients

    1 Tbsp olive oil
    5 green onions slides (whites and light green; reserve greens)
    1 red bell pepper chopped
    1 1/2 tsp. ground cumin
    3 cloves garlic minced
    1/2 tsp thyme
    2 cans black beans, rinsed and drained
    1 can pumpkin puree
    1 can diced tomatoes with juices
    1 can chicken OR veg broth
    1/2 cup water
    1/2 tsp peppper
    3/4 tsp sea salt (or a little less)
    1/8 tsp cayenne pepper

Tips

You can use regular onion, if desired. Add sour cream after cooking for creaminess.


Directions

Heal oil; Add onion, garlic and peppers cooking 4-5 minutes until soft. Stir in cumin and thyme cook for 1 minute. Add beans, pumpkin, tomatoes (undrained), broth and water; bring to boil. Reduce heat and simmer for 10 min. Stir in salt and cayenne pepper. Top with greens of onion (optional) before serving.
