Ingredients

6 tbs flour
6 tbs unsalted butter
16 oz small elbow macaroni
4 cups almond milk
2 cups shredded mild cheddar cheese
2 cups shredded sharp cheddar cheese
* for a slightly sweeter taste use vanilla almond milk (or soy). Works great with 2% as well
Tips
Be patient making the white sauce. Add the flour slowly, stirring constantly. It must be smooth otherwise the whole thing is a bust.
Same with adding the cheese - add slowly and let it melt completely while stirring.
This may be easily halved and baked in a 8X8" pan
To reheat, microwave for 15-20 sec
Directions
1. melt butter in large saucepan then
slowly add flour while stirring with a wire whisk to make a white sauce
2.slowly add cheeses while stirring with whisk until you get a thick cheese sauce (reserve a little of each to sprinkle on the top
3. Meanwhile, boil pasta until firm, Strain, cool and set aside
4. Preheat oven to 350F
5. Add salt and pepper to cheese sauce to taste
6. lightly grease 9 x 12 casserole pan
7. pour cooled pasta into the pan
8. Fold cheese sauce into the pasta to distribute throughout the noodles
9. Sprinkle remaining cheeses onto the top of the mac/cheese
10. Bake in 350F oven for 30 min or until lightly browned on top and sauce is firm with pasta (not too tight!)
11. Allow to cool slightly before serving
